A Yucatan recipe originally made with suizz cheese but, you can substitue Montery jack.

Enchiladas Suisse

1 onion, chopped
2 Tbsp. vegetable oil
2 cloves garlic, crushed
2 cups tomato puree
1 (4 oz.) can chopped green chiles, drained
2 to 3 cups chopped, cooked chicken (see note above)
3 cups whipping cream
6 chicken boiullon cubes
8 to 10 large flour or corn tortillas (I use flour tortillas)
3/4 lb. swiss cheese grated (I use monterey jack cheese)

Saute onion in oil until soft. Add garlic, tomato puree, chiles and chicken. Simmer for 10 minutes.

Heat 3 cups cream and dissolve bouillon cubes in cream using whisk.

Fry tortillas in a small amount of oil until soft; not crisp. Dip each tortilla in cream mixture; fill with about 1/4 cup chicken mixture. Roll up tortillas and place seam side down in a 13x9x2-inch baking pan sprayed with PAM. Pour remaining cream mixture over tortillas and sprinkle with grated cheese.

Bake at 350 for 30 minutes.

I'm not sure what enchiladas 'suizas' are, but I have a very good and easy recipe for enchilada's. My Mexican boyfriend loves them.

Take about a pound and a half of meat (ground beef, chicken chunks, shredded pork, whatever), brown it. Add a package of taco/fajita seasoning to meat plus about 1/3 cup of water, cook until most of the water has been absorbed. Combine 1 can tomato sauce/tomato soup/tomato puree (it is really whatever you like), 1 can enchilada sauce, 1 can cream of mushroom, 1 can chili's if you'd like, I usually add a couple spoonfuls of a hot salsa and green onions. Roll meat up in corn tortillas-the burrito/large size (about 5 or 6 tortillas). Put in a 13"x9" pan. Pour the mixture of sauces over the top of the tortillas. Sprinkle about 8 oz. of cheese over the top. (Green onions make an attractive garnish, too). Bake at 375 for about 30 minutes or until the cheese is really melted but not burnt. I like to add sour cream, but I'm definitely a Yankee and don't have a taste for spicy food.
