Not really. If you're going to put something in make it a neutral flavor aka water other wise you start changing the flavor make up of your dish . Wine has the acidity of orange juice so if you want to add an acid use OJ as the standard.
Contrary to popular opinon , all the alcohol does not burn off and there is always a residual amount present.

If you are worried about the alcohol, it burns up during the cooking process.
Maybe lemon juice, but I'd stick with the sherry-its in the recipe for a reason.

Depending on the recipe you can substitute some orange juice or chicken stock or even water would be ok.

I've used broth and water. I've also used whatever leftover white wine i have in the fridge.....worked well!

I find that oil is very heavy - try water... it works just the same and neither adds or subtracts flavor... happy eating!
