Got this from Alton Brown in the food network:
1/2 lb elbow macaroni (I used shells, 'cause I'm cool like that lol)
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar cheese, shredded
1. In a large pot of boiling, salted water, cook the pasta to al dente and drain.
2. Return pasta to the pot and melt in the butter, toss to coat.
3. Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese.
4. Over low heat continue to stir until cheese is melted and mixture is creamy.

My favorite way of making mac-n-cheese is by mixing a can of cream of mushroom soup (with the milk) in a large pan with 1/2 stick of butter. Heat it up and add a 8oz block of grated sharp (mild or stronger, your preference) cheese slowly stirring to melt. After it all melts into a sauce, add cooked macaroni. Stir until mixed well, remove from heat and let set a bit, the mac will absorb some of the moisture still, and it will thicken up. Add salt and pepper to taste, too.
I don't have a measurment recipe, I just through it together. I usually cook up too much macaroni, but I add to the mixture till it looks good, and use the leftover for somethin' else.
It can also be placed in a casserole dish and thrown in the oven for a little hard texture on top that some people like. Just butter the casserole dish first to make cleanup easier.

well thats simple cook the macaroni drain, return to pot add cheese and stir. might need to add a little milk it can get thick
