Southern living makes some really great thirty minute meals that he can down size for just two or one. Generally the meals in it are sized for 4 people but are very easily made into one/two person meals.
They use great easy very common ingredients and it's all really great. I'd recommend it.
If he's more of a skilled cooker try the Paula Deen books. I love that woman to death and she has some of the most amazing recipes. But if he's trying to avoid the freshman 15 this may not be the answer for him.
Also try one of Rachel Ray's books. NOT the Express Lane book as that one is all gross but most of her other things are great.
You could also try a recipe book that's been put together through pure people contribution and it's going to have hundreds of different recipes all taking different times etc that way he has a lot of options!

How about asking other family members write down his favorite food recipe on the little recipe cards and put them in a brag book(small photo album) that has the plastic pages so he don't spill anything on them.
We did that to my nephew whom went away to college and now he can make his favorite recipe on his own and still have the feeling of having a home cooked meal from back home. We got a bunch of 5 ingredient recipes and he thought it was the best thing in the world. It ment more to him than receiving a betty crocker book, which don't get me wrong is an excellent book, but this was more personal and reminded him of home

My cousin recently moved to California, and for Christmas we bought him a book kind of like this:

They are really simple burger recipes, that are really fast. We also bought him a little frying pan, a spatula, and some seasonings. He really loves the cookbook and uses it often. He says it's handy because he's always busy with college, and doesn't have a lot of time to cook, but with this cookbook, he has many different burgers to choose from and they cook so fast. He is very happy with it.

This is the new edition of Joy of Cooking, it is actually called the all new all purpose joy of cooking, it has recipes that are delicious and step by step directions that are the easiest I ever seen and tested, I like easy and easy to read simple recipes, he will love this and it will not collect dust, in fact he can keep and give to wife when he gets one!

I know of a few in fact after my mother passed away and my dad had to learn to cook I gave him these same books he often still refers to them and is proud of his new skills

Better homes and gardens New Junior Cookbook {this one is simplified for even the youngest of cooks but it has some recipes for things like desserts, roast beef wraps, pizza turnovers, lasagna, torellini alfredo as well as snacks and such. Even my 7yr old stepdaughter helps me out with that book and likes it because its so simple. My nephew who is a chef at a very exclusive resturant in Dallas will even use the book on weekends for quick simple things for him to snack on when he's alone

If I had only one book by far the best choice would be the New Joy of Cooking. It has virtually everything, the recipes are well written and explained, and it "teaches" the subject before providing several recipies and variations. My wife and I consider it our standing wedding gift. Our thirteen year old can use it easily.

get him a Better Homes and Gardens or Fanny Farmer cookbook. they cover everything so if he has a problem, the answer will be in the book. Rachel Ray has a good one with meals you can fix in 30 minutes. Betty Crocker is another good one.

Any Campbell soup cookbook. For an extra bonus buy him some cans of cream of mushroom, cream of chicken, and nacho cheese.
Their recipes are always easy and most of the time you have all ingredients in your home.
Whenever I go grocery shopping I always buy cans of soup to have on hand to make a good meal fast.

The Better Homes and Gardens one. It's the classic red plaid covered one. It not only has everything organized super well, it tells how to do stuff with pictures and diagrams. It's like the grandfather of all cookbooks.
