I use this one for shrimp, but You can try it on chicken but I never tried it on chicken!
Shrimp on the Barbie
Jumbo shrimp (10 to 15 count)
Marinade:
1/2 cup vegetable oil
1/4 cup white vinegar
1/4 cup orange juice
1/4 cup canned sweetened coconut cream
1/4 cup pineapple juice
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 tablespoons soy sauce
1 good shake hot sauce
Combine all marinade ingredients.
Soak uncooked and unshelled shrimp in marinade for 1 to 1 1/2 hours turning periodically.
Place on hot grill and cook until just pink and blackened on the outside.

INGREDIENTS
1 cup vegetable oil
1/2 cup soy sauce
1/2 cup light corn syrup
1/4 cup lemon juice
2 tablespoons sesame seeds
1/2 teaspoon garlic powder
garlic salt to taste
4 skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces
1 (8 ounce) package fresh chopped mushrooms
2 onions, quartered
1 green bell pepper, cut into large chunks
DIRECTIONS
In a medium bowl, blend vegetable oil, soy sauce, light corn syrup, lemon juice, sesame seeds, garlic powder, and garlic salt. Place chicken in the mixture. Cover, and marinate in the refrigerator at least 2 hours.
Preheat an outdoor grill for medium heat, and lightly oil grate. Thread chicken onto skewers alternately with mushrooms, onions, and green bell pepper. Pour marinade into a saucepan, and bring to a boil. Cook for 5 to 10 minutes.
Place skewers on the prepared grill. Cook 15 to 20 minutes, turning frequently, until chicken is no longer pink and juices run clear. Baste with the boiled marinade frequently during the last 10 minutes.
INGREDIENTS
3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined
skewers
DIRECTIONS
In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

Lighthouse makes an organic salad dressing called Raspberry Lime Vinegarette that sounds like it would be good on chicken, fish or shrimp. I've been dying to try it. If it sounds good to you, you can find it in your local produce department's refrigerated section. You can probably kick it up a notch by adding some crushed black pepper and/or chili powder.

this is a great marinade i got a bout 10yrs ago from a guamanian woman it taste great , use one 1/2 cup of kikomon soy sauce 1/4 cup of white vinager 1 table spoon of lemon juice 3 table spoons of sugar 1 spoon of onion powder or chopped onion and 1 pinch of salt and pepper mix well then add to the meat you want to marinade it is really great,.

I like to mix a cup of mayo with 1/2 cup spicy mustard and garlic seasoning. j just mix together and coat chicken. oh and dont forget salt and pepper. Enjoy!

Use any oil and vinegar based salad dressing. I like raspberry vinagrette the best. It has a great taste and is does not taste ordinary.
