I was gonna make a risotto for dinner this evening, but i've just discovered that i don't have any arborio rice in the pantry. I do have a pack of short grain pudding rice though. Would this make a viable and suitable alternative?

You can use the short grain pudding rice but it will be more starchy and sticky than Arborio rice. Arborio rice is more creamy when it cooks.

At this point, if you don't want to take the risk. See if you have any medium or long grain rice and make a pilaf instead.
