10 ripe tomatoes
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
1/4 cup chopped fresh basil
1/4 teaspoon Italian seasoning
1/4 cup Burgundy wine
1 bay leaf
2 stalks celery
2 tablespoons tomato paste
DIRECTIONS
Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.
In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

Peel and chop at least 2 pounds of tomatoes. Saute in olive oil, 2-3 cloves diced garlic, and some mushroome. If you love thearthy Italian sauces, use 2 cans, drained, 1/2 package of fresh and reconstitute some dried mushrooms Put all of this in a large stock pot and put on to cook on very low heat. Cook for hours and hours. at least 4-5. If you are using dried herbs, throw them in. If you are using fresh herbs throw them in during the last 15 min of cooking time. You can add browned meatballs, or browned ground meat to this after it cooks out. If tomatoes don't break up nicely and fall apart, take a potato masher to them. If sauce is too thin, add 1/2 cup freshly grated parmsean cheese. Also, salt to taste.

Try putting the tomatoes in a blender and blending for 2 minutes on "Puree" until it turns to sauce. Do not add water as tomatoes already have water in them unless needed- then add a little at a time.

Make sure you use some great tomatoes, such as romas for your sauce. Use a blender to liquify them and simmer until they thicken. You can add fresh basil, oregano, garlic, and bay leaf to the mixture, along with kosher salt, fresh ground black pepper and a little red pepper as well. I usually put in a pinch of sugar in my sauce to bring up the tomato flavor, but its optional. Simmer your sauce for at least an hour. Another trick is to add chopped tomato to your sauce as well as other chopped veges (or you can blend them as well and make them a part of the whole)
