Well, there are some French words that have become French family names that are masculine enough.

Chevalier would be a good choice. Fromage would not, nor would Bebe. Canard is just wrong as a name anyway, it doesn't even suit ducks all that well. Paris was once a manly name in mythology, but it'll probably be several generations before a man could wear it again. Chat is too short to be a real name, and Chateau shortens to Chat, so that's out.

Guess you're stuck with Chevalier, but what's wrong with "Bubba", anyway?
