Camarones Ogados or Agua chile
clean the shirm open the shim. Copvered with limon juice.
boild 7(cola de rata) chilis
then blend them.
trow in to the shrim
put some peper
and salt.

Mexican Shrimp Cocktail

INGREDIENTS
2 pounds cooked shrimp, peeled and deveined
1 tablespoon crushed garlic
1/2 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
1 1/2 cups tomato and clam juice cocktail
1/4 cup ketchup
1/4 cup fresh lime juice
1 teaspoon hot pepper sauce, or to taste
1/4 cup prepared horseradish
salt to taste
1 ripe avocado - peeled, pitted and chopped
DIRECTIONS
Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.

Shrimp Ceviche

INGREDIENTS:
3 lbs small raw shrimp, cleaned
4 large tomatoes, seeded and diced
6 limes, juiced
4 lemons, juiced
1 cup cilantro leaves, chopped
1 serrano chile, seeded and finely chopped
1/2 of a cucumber, peeled and diced
1 red onion, diced
salt and pepper to taste
3 tablespoons tomato sauce

PREPARATION:
Lay out shrimp in the bottom of glass baking dish. Pour lemon and lime juice over them and refrigerate for 3 hours. The juice will "cook" the shrimp. Toss with remaining ingredients and refrigerate for one more hour or longer.

Enjoy with tortilla chips or as a topper for grilled fish!

Use cut up minced tomatoes, onions, cilantro, tabasco, lemon or lime, salt, pepper, can add capers, chopped jalapenos pickeled or not olive oil and mayonnaise. I use a tablespoon of ketchup too. Boil and spice shrimps in Old Bay seasoning with Cajun seasoning, vinegar and a whole lemon cut into slices.

Can add some garlic juice (few drops) to the sauce but I like onion and also can add green or black olives chopped.

Serve in avocado halves. YUM with corn crispy tortillas
