1/4 cup cocoa
2 cups sugar
1/2 cup milk
1/2-1 cup margarine
1/2 cup peanut butter
3 cups quick-cooking oatmeal
1 teaspoon vanilla
1/8 teaspoon salt

Bring first 4 ingredients to a boil.
Cook for 1 minute.
Remove from heat.
Add remaining ingredients.
Mix well and drop by teaspoon onto wax paper.
Let cool.
Note: After I have let them cool, I put them in the fridge.
They seem to harden better, plus they taste good that way. mm!

No Bake Chocolate Cookies
INGREDIENTS
2 cups white sugar
1/2 cup milk
1/2 cup margarine
3 cups rolled oats
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1/2 cup flaked coconut
DIRECTIONS
In a saucepan over medium heat, combine sugar, milk, and margarine. Bring to a boil, stirring occasionally, then boil for 4 to 5 minutes. Remove from heat and stir in the oats, vanilla, cocoa and coconut. Spoon onto waxed paper and allow to cool for at least an hour. Store in an airtight container.

These are my husbands favorite cookies!

1 stick of butter ( not margarine )
2 c. sugar
1/4 c. cocoa ( I add a little more )
3 1/2 c. quick oats
1/2 c. milk
1/2 c. creamy peanut butter

Cut butter into smaller slices so it melts quicker and add sugar, cocoa, and milk in a medium sauce pan on medium heat. Stir constantly on until butter is melted. Turn heat up to a medium-high heat and keep stirring constantly and stir for about 2 minutes at a rolling boil. Take off heat and add peanut butter, stir well, then add oats. Spoon onto sprayed foil or wax paper your desired size of cookies, let cook and then eat!! Enjoy!

This is a quick and easy recipe! Great for a snack for guests who arrive unexpectidly!

Chocolate Fudge Oatmeal Cookies

INGREDIENTS:
2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 ounces butter
1 teaspoon vanilla extract
1/2 cup chopped pecans
2 1/2 cups quick-cooking oats

PREPARATION:
Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla and chopped nuts. Add oatmeal and stir to blend thoroughly.

Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies.

Oh my gosssh these are AMAZING! I love them cause they are so easy and no baking involved!! soo yum.

Big Batch No-Bake Cookies

INGREDIENTS:

6 c. oatmeal

INGREDIENTS
1 (12 ounce) jar caramel ice cream topping
1 cup chopped pecans
36 buttery round crackers
2 cups semisweet chocolate chips
DIRECTIONS
In a medium saucepan, combine caramel topping and pecans over medium heat.
Stirring constantly, bring to a boil and cook 3 to 5 minutes longer or until mixture thickens. Remove from heat and allow to cool 5 minutes.
Spoon about 1 1/2 teaspoons caramel mixture on top of each cracker. Refrigerate 1 hour or until firm
In a small saucepan, melt chocolate chips over low heat, stirring constantly. Remove from heat.
Using tongs, dip bottom of each cracker in chocolate. Transfer to waxed paper and refrigerate 1 hour or until chocolate is firm. Can be stored in an airtight container in the refrigerator.
