Presumably snce it was a miracle, and God knows what perfect wine is, and He was showing through the sign the excellence of the New Covenant over the Old one, it must have been as good as good can be.

Top quality red Bordeaux? Chateau Neuf du Pape? (the Pope's wine). In Jesus time presumably the best wines were imported from Carthage, Spain, Italy, Greece etc, but maybe the Jews had kosher rules against non-Jewish brews.
