Country Fried Cube Steak with Gravy
Ingredients:
4 cube steaks, about 1 pound
1/2 cup all-purpose flour
1/8 teaspoon black pepper
2/3 cup buttermilk
1 cup finely crushed saltines, about 20 to 25 crackers
3 tablespoons shortening
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 cup milk
Combine flour and pepper in a shallow bowl. Pour buttermilk into a second shallow bowl. Put cracker crumbs into a third shallow bowl.
Dredge cubed steaks in the flour, dip into the buttermilk, then coat with the cracker crumbs, pressing with hands if necessary to coat thoroughly.
Melt shortening in a large skillet over medium-high heat. Cook steaks for about 3 minutes on each side, or until nicely browned and cooked through.
Drain off most of the excess fat, leaving the dregs, or browned bits.
Add soup and milk to the skillet drippings; stirring and scraping up browned bits from the bottom of the skillet. Continue cooking, stirring constantly, until mixture comes to a boil. Serve steaks with the hot, creamy gravy.
Serves 4.

Fry it in a pan:
A little Canola or Olive oil in a pan
Heat up to Med-Hi
Sprinkle salt on your steak and some pepper
Sautee some vidalia onions in the oil (don't burn them)
Then turn the heat down to Medium
Place cube steak in pan with onions Fry it on both sides until brown...turn heat down and cover...
Serve with Rice and fresh salad

season some flour with salt & pepper and a little dried oregano. dredge the steaks first in lightly beaten eggs, then in the seasoned flour. fry in a little oil in an electric skillet or non-stick pan, until browned on both sides. add 1 (15 oz) can of diced tomatoes, one can beefy or golden mushroom soup, one onion chopped, one green pepper cut into thin strips, 8 oz mushrooms sliced. cover and simmer for 30 minutes. in the meantime, cook a package of extra wide egg noodles per their package instructions. serve cubed steaks & mushroom/pepper mixture over noodles. offer parmesan, if desired.

I brown it on both sides, Pour off extra grease, Add a can of Cr. of Mushroom soup and some water to thin, then let it simmer. Serve with mashed potatoes or rice or noodles. A veg medley and salad.

The Greeks have a great recipe that has some kind of spice mixture that taste like a cross between Cinnamon and cardamon but with other spices. Taste is phenomenal!

CUBED STEAK IN MUSHROOM GRAVY
2 lbs. cubed steak, rolled in flour
1 c. cold water
2 tbsp. oil
1 can golden mushroom soup
Cut cubed steak into bite size pieces and brown in oil. Remove from pan and place in bowl. In pan, put water and golden mushroom soup. Bring to boil and place meat back in pan. Simmer 15 to 20 minutes until gravy thickens.
CUBE STEAK ITALIANO
1 lb. cube steak
1 onion
1 green pepper
2 tbsp. oil
1 c. spaghetti sauce
Slice cube steak into strips. Cut onion and pepper into strips. Saute all 3 in oil. Stir in spaghetti sauce and cover and simmer 10 minutes. Serve over egg noodles.
CUBED STEAK PARMIGIANA
6 beef cubed steaks (1 1/2 lb.)
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 egg
2 tbsp. water
1/3 c. Nabisco Premium saltines, finely crumbled
1/3 c. grated Parmesan cheese
1/2 tsp. basil leaves
3 tbsp. cooking oil
1 (15 oz.) can tomato sauce
1 tbsp. sugar
1 clove garlic, crushed
1/2 tsp. leaf oregano
1/4 c. grated Parmesan cheese
3 slices (4 oz.) Mozzarella cheese
Leaf oregano
Combine flour, salt, and pepper. Dredge steaks. Beat together egg and water. Combine saltine crumbs, 1/3 cup Parmesan cheese and basil leaves. Dip each steak in egg mixture, coating evenly. Measure oil into 9x13 inch roasting pan, place in oven and preheat oven to 375 degrees, 5 to 10 minutes.
Place breaded steaks in the pan and bake, uncovered, for 25 to 30 minutes, or until golden brown. Pour off drippings.
Combine tomato sauce, sugar, garlic, and leaf oregano; and pour over meat. Sprinkle with 1/4 cup Parmesan cheese. Return to oven and bake 20 minutes. Place a slice of Mozzarella cheese on each steak and sprinkle oregano over cheese. Bake 3 to 5 minutes, until cheese is melted. Makes 6 servings.

put it in the oven in a deep pan with som builion and vegatables and a little water/beef stock at 350 and bake for about an hour or more covered with tin foil
