I don't want to impair the flavour or consistency. Would it be safe to heat up to 70C?

Thanks

It should be okay since you're only heating to 70C you're not driving out any additional moisture or flavor.

Maple syrup is made by boiling the sap at 100C (212F). As in candy making, the sap is boiled until a certain temperature is reached (219-220 F) which ensures enough water has evaporated thus concentrating the sugars.

From the website below,
The sugarmaker concentrates his attention to the front of the evaporator where the boiling sap is turning a golden color as it approaches being maple syrup. From time to time he will check the temperature of the boiling liquid. When it reaches seven and a half degrees above the boiling point of water, it has reached proper density and has become maple syrup..

Yes it is safe! And it tastes much, much better! It will be thinner though. This is it's normal viscosity.
