I am making chicken tonight (marinated in a low fat italian bbq'd) and I am at a loss of what to serve with it! Maybe rice and green beans? Any good ideas anyone?

ITALIAN VEGETABLE SIDE DISH

1 can green beans
1 can Italian style stewed tomatoes

Cook both vegetables separately. When ready to serve, mix both vegetables together for a delicious side dish.

RICE SIDE DISH

1 c. uncooked reg. rice
1 stick butter
1 can beef bouillon soup
1 can French onion soup
1 can mushrooms

Brown rice in butter in saucepan on top of stove. Takes 15 or 20 minutes stirring all the time. Put in a casserole and add soups and mushrooms. Bake at 350 degrees for 1 hour (or until done).

GREEN BEAN SIDE DISH

4 slices bacon
1 qt. green beans, cut into 1 inch pieces
3 med. onions, sliced
2 c. chopped tomatoes
1 tsp. salt
1/4 tsp. pepper
1 c. hot water

Dice bacon and fry until crisp. Remove from skillet and fry onions in bacon grease. Add green beans, bacon to onions and fry to brown beans slightly. Add tomatoes, salt, pepper, hot water, and cook very slow until beans are tender. Add water if necessary to make a little sauce to serve with beans.

POTATO CASSEROLE OR SIDE DISH

2 lbs. frozen hash browns, thawed
1/2 c. butter, melted
1 can cream of chicken soup
1/4 tsp. pepper
1/2 c. onion, chopped
1 pt. sour cream
2 c. Cheddar cheese, grated

TOPPING:

Mix together: 2 c. Corn Flakes, crushed
Mix together hash browns and rest of ingredients (save topping for later). Put mixture in a 9 x 13 inch pan. Sprinkle topping over the top. Bake at 350 degrees for 45 minutes. (You can make ahead and reserve topping until ready to bake.) Serves 12 to 14.

stuffing and green beans
mashed potatoes and corn
rice and mixed veggies
fries and some kind of veggie
pasta and peas
or any combination of these, for some color make carrots
or make a salad with red, yellow and green peppers

I would serve it with rice. Perhaps, fried rice. A fresh green salad and cream corn. MMMMM.

I am cooking chicken on the bbq too. I am going to make home-made french fries and a tossed salad to go with it.
