Personally I like it grilled.

Grilling is good. Cut two diagonal slashes in the flesh, about .5cm deep before putting it under a medium grill. This helps the flesh cook thoroughly and the grilling crisps the skin a bit, adding flavour. Someone suggested toasted almonds - these are lush with trout, especially if you put them into a bit of hot, melted butter and pour it over the fish.

If its whole, clean the fish inside so no brown bits are left as this can affect the taste. Now slit the skin and shove thin slices of garlic inside. Stuff the cavity of the fish with a bunch of herbs, thyme, fennel and parsely all work well, and some lemon slices. Brush the outside with a little oilve oil.

Now grill or BBQ the fish whole untill you can see the inside of the fish is opaque. It should fall off the bone easy when its done.

Serve with some yogurt or creme fraiche mised with lemon juice and lemon zest. Potato wedges and salad are nice alongside.

I do it in a fish kettle, leaving its head on just trim the fins and tail put cold water in the base with bay leaf pepper corns chopped onion and carrot, place a trivet on top then your fish, in the belly part of the fish place fennel and parsley, once the water has boiled, steam the fish for about seven to ten minutes all depends on the size of the fish you'll know when its cooked as when you put a knife in to the flesh it parts and is pink.

Try placing a nob of garlic butter inside the fish and grilling it with toasted almonds. Enjoy!
