How do I cook rice for 2,000 people, including cooking pans? Also beans for the same amount?

Ingredients:
20 cups butter or margarine
20 cups shortening
60 quarts onions, dry, finely chopped
120 cloves garlic, minced
200 pounds rice
70 gallons stock. beef or chicken, boiling (OR WATER)
180 tablespoons salt

Directions:
Melt butter or margarine and shortening and divide into 2 pans.

Saute equal amounts of onions and garlic in each pan until onions are a light yellow.

Add an equal quantity of rice to each pan. Cook until rice is lightly browned, stirring constantly.

Add 1 3/4 gal. stock and 3 oz. salt to rice in each pan. Cover pans.

Bake 1 hour or until rice is tender. Remove from oven; stir lightly with a fork. Pan Size: 18 by 24-inch Roasting Pan Temperature: 400 degree F. Oven

This recipe for Rice Pilaf For 100 serves/makes 2000

Ingredients:
60 gallons cans pork and beans
30 pounds brown sugar
30 bottles (32-oz. size) catsup
10 pints prepared mustard
10 pounds bacon
10 packages frozen chopped onions
salt and pepper to taste


Directions:

Mix all ingredients together. Bake at 350 degrees for 1 1/2 hours in a conventional oven or 30 to 45 minutes in a convection oven.

For starters, you will need more than 1 baking dish to serve that many people. Here is a recipe for Oven Brown Rice:
INGREDIENTS
38 cups brown rice
37 cups beef broth
37 (14.5 ounce) cans chicken broth
9-1/3 cups butter, melted
3/4 cup and 2 teaspoons garlic salt
3/4 cup and 1 teaspoon seasoned salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a 2 quart casserole dish, mix together rice, beef broth, chicken broth, butter, garlic salt, and seasoned salt. Bake uncovered in preheated oven for 60 minutes, until liquid is absorbed and rice is tender.
Instead of the 2 qt dish, use a couple 9x13 pans. I am not sure how many you will need. You will need to do the same with the beans.

Baked Beans
INGREDIENTS
50 (29 ounce) cans baked beans with pork
25 cups packed brown sugar
25 cups ketchup
3 cups and 2 tablespoons Worcestershire sauce
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a casserole dish, combine beans, brown sugar, ketchup, and Worcestershire sauce.
Bake, covered, for 45 minutes or until bubbly.

Try bring a swimming pool to the boil, pour in rice until it reaches the top of the water, let boil for 10 min. (all water will be absorbed by then) let stand for 15 min.Serve !

10 servings = 1 box
1 box = 10 persons
