what shall i cook for dinner, needs to be quick and healthy, don't fancy a salad!

Jasmine rice and a steamed veggie:
Chicken Kiev

Ingredients:
3 tablespoons reduced-fat margarine, softened
1 tablespoon snipped fresh parsley
1/8 teaspoon garlic powder
6 small boneless, skinless chicken breasts
2 cups Cornflakes
2 tablespoons chopped fresh parsley
1/2 teaspoon paprika
1/2 cup skim milk

Mix margarine, parsley and garlic powder and shape into a rectangle (3 x 2 inches). Cover and freeze until firm, about 30 minutes. Remove excess fat from chicken and flatten each to 1/4-inch thickness between waxed paper. Heat oven to 425 degrees. Cut margarine into 6 pieces and place 1 piece on each chicken breast. Fold sides of chicken breasts over margarine and secure with wooden toothpicks.

Mix Cornflakes, parsley and paprika. Dip chicken into milk and then evenly coat with Cornflake mixture. Place chicken breasts seam side down on a baking dish that has been sprayed with nonstick cooking spray. Bake uncovered about 35 minutes or until chicken is done.

This depends on what is in your kitchen. I like salsa and chips as a yummy quick dish and it is low on the fats, especially if you have oven crisp chips rather than fried.

If that idea does not meet with your fancy how about a baked potato (microwave it) with toppings. Make the toppings low fat like salsa, broccoli with a little cheese, onions and peppers seared in olive oil and a little garlic or even some low fat sour creme with salt and pepper.

My last idea for you is a baked chicken or fish with a small baked potato (microwave it) and some fresh or frozen veggies. You can spice up the veggies with some season salt, lemon zest and pepper or a dash of olive oil and garlic. Don't forget to spice up your chicken or fish with some spices or a marinade. Italian Dressing is a good marinade for a quick pick me up.

I love making pasta with vegetables. It's really simple - you cook your pasta and set it aside, and then you pour some olive oil into a skillet and heat it up. Throw in whatever fresh veggies you like (broccoli, zucchini, and peppers usually work best) and cook them just so they get warmed through. This is also when you season them with salt and pepper, and whatever other spices you would like to use. Right before you take it off the heat, throw the pasta in the skillet and toss it around so all the pasta and veggies mix together and get the olive oil on them.

It's really light/healthy, and it takes about 15 minutes to make!

Beef Taco Bake

Serves: 4

Ingredients:

1 lb. ground beef
1 can (10 3/4 oz.) Tomato Soup
1 cup (small jar) Chunky Salsa OR Picante Sauce
1/2 cup milk
6 (8") flour tortillas, cut into 1" pieces OR 8 (6") corn tortillas, cut into 1" pieces
1 cup shredded Cheddar cheese (4 oz.)

Directions:

COOK beef in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat.

ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.

BAKE at 400°F. for 30 min. or until hot. Sprinkle with remaining cheese.

and
natural fresh yogurt mixed with mint sauce

yum, I always have chicken tikka and a couple of naan breads in the freezer and some natural yogurt in the fridge.

its quick and simple and very very tasty, and should anyone pop round to visit and need feeding, they think you have gone to a lot of trouble, it does taste like TAKE AWAY too

Pasta's both quick and healthy. Or if you have lots of vegetables do a stir- fry.
