The wiki article is as good as any for quick reference.

I'll add: All diodes have a reverse breakdown voltage -- it might be 200 V or 1000 V or 20 V (for some schottky diodes), but zener diodes have a very controlled, predictable, manufactured reverse breakdown voltage.

A Zener diode is run in the nominally non-conducting direction, with an applied voltage that is sufficient to cause it to break down and conduct. A series resistor is used to control the current. Zener diodes are used as reference voltages in power supplies, as the breakdown voltage is quite stable. For technical specs, get data sheets from manufacturers (Google should turn some up).
