I'm not sure exactly what defines a style of cooking, other than the ingredients. Perhaps because of the heavy farming and hospitality based industry in France, cooking is an important part of life. It is fundamental, along with the production of food.

Garlic originates from the far east, and so it's introduction to France came later in the development of the world. The association of France with garlic and onions, is really just a media influenced association. Much in the same way as you might associate leeks with Wales.

Ask what has influenced french cuisine, and you will see that influence is reciprocal!
