It's not baked, but my favorite way to do fruit is to slice an apple very thin (gala) and cook in a skillet with butter, brown sugar, cinnamon and golden raisins. Serve over vanilla ice cream. YUM!!!

my nan used to bake a wicked tart that consisted of pears apples damsons and believe it or not tomatoes, it really did work, she also handed down some great wartime recipes which she made up herself...the best being woolagong cutlets which involve potatoes corned beef onion flour and tomatoe soup....and if you doubt my palate try this experiment...eat a cube of mature chedder and two cubes of cadburys choclate at the same time...she showed me that one too ...exxquisite!!

BERRYPIE Start with 3 cups drained canned berries or 4 cups fresh--2/3 c. berry juice or water--3/4 c. sugar---1/4 tsp. salt--4 tbsp. flour or Tapioca. Take any kind of berries and combine with juice in saucepan and bring to a boil . Cook over low heat until thickened. Cool while making pastry, pie crust. Line 9 inch pie plate with bottom crust and pour in filling. Place top crust over filling, trim and seal. Prick top crust to allow for ,escape of steam. Bake in hot oven at 400 degrees for 30 min. or until crust is nicely browned. PIE CRUST---2 c. flour--1tsp. salt--3/4 c. Shortning---water(cold)-------Mix togeather flour...salt....and shortning, until crumbly. Add water slowly until dough is moistened. Divide dough in half, roll on floured cloth or table.

Berry Crisps are soooo good and so easy. Be sure to put some dough on the bottom to catch all those juices and serve it up with some vanilla ice cream.

One of my favourites is blackberry and apple crumble with some of the flour replaced with oats.
Another is rhubarb crumble, with ginger in the crumble.
