Another main reason turkey eggs are not sold to consumers is the size of the eggs. Recipes are designed for the amount of liquid in a chicken egg. The weight of one large chicken egg is 50 grams while the weight of one turkey egg is 70 grams. Such a difference in bakery recipes would be dreadful to the final results.

You can eat turkey eggs if you raise them or know a farmer. But the demand for turkey meat is much higher than the demand for their eggs so most turkey farms sell the animal rather than the egg. The eggs are quite a bit bigger than chicken eggs but are fine to eat.

Turkeys don't lay many eggs and the ones they do lay are usually left to make more turkeys in time for christmas.
There is more money in hatching the eggs than eating them.
