SIMNEL CAKE
1 c. butter (room temperature)
1 c. sugar
3 eggs
1 c. dark raisins
1 c. golden raisins
1 c. currants
1/2 c. chopped red candied cherries
1/2 c. chopped mixed candied fruit
2 (7 oz.) pkgs. marzipan
1 egg yolk, beaten and 1 tbsp. milk for glaze
3 tbsp. dark rum or sherry
3 tbsp. orange juice
2 c. sifted all-purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground allspice
Preheat oven to 325 degrees. Grease an 8-inch spring form pan or deep cake pan. Line bottom and sides of pan with waxed paper and then grease.
In a large bowl beat butter and sugar 5-8 minutes until light and fluffy. Beat in eggs one at a time; beat well after each addition. Stir in raisins, currents, cherries, mixed fruit, rum (or sherry) and orange juice until combined.
Sift flour, baking powder, cinnamon, and all spice over fruit mixture. Fold in.
Place 1 package of marzipan between 2 sheets of waxed paper, roll out to an 8-inch circle.
Spoon 1/2 cake batter into prepared pan. Place marzipan circle over batter. Spoon remaining cake batter over marzipan. Smooth top.
Bake in preheated oven 2 hours and 30 minutes to 3 hours or until cake springs back when lightly pressed. Remove from oven; cool completely in pan or a wire rack.
Increase oven temperature to 425 degrees. Remove cooled cake from pan, peel off lining paper. Place cake on a small baking sheet. Place remaining marzipan between 2 sheets of waxed paper; roll out to an 8-inch circle. Brush top of cake with egg-yolk glaze. Place marzipan circle on top of cake; flute edge. Score marzipan in lattice pattern with blunt knife. Brush lightly with egg-yolk glaze.
Bake in preheated oven 10-12 minutes until marzipan is lightly browned. Remove cake from baking sheet; cool completely on wire rack.

Nigella has a great one in her Feast book.
It is well worth buying as is huge and has everything from Easter to Christmas with all sorts of different celebration foods in between including morning after and food to make to celebrate a romantic night in. It has food for kids to make and loads of yummy cakes. I don't know where I'd be without this book.

Easter Simnel Cake
INGREDIENTS
1 cup margarine, softened (225g)
1 cup light brown sugar (220g)
4 eggs
1 3/4 cups self-rising flour (225g)
1 1/3 cups golden raisins (220g)
1 cup dried currants (145g)
2/3 cup candied cherries - rinsed, dried and quartered (110g)
1/4 cup candied mixed fruit peel, chopped (60g)
2 tablespoons grated lemon zest (10g)
2 teaspoons mixed spice (4g)
1 pound almond paste (455g)
2 tablespoons apricot jam (40g)
1 egg, beaten
DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C). Grease and flour an 8 inch springform pan. Line the bottom and sides of pan with greased parchment paper.
In a large bowl, cream together the margarine and brown sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour. Stir in the golden raisins, currants, candied cherries, mixed fruit, lemon zest and mixed spice. Pour 1/2 of batter into prepared pan.
Divide almond paste into 3 equal portions. Roll out 1/3 of the almond paste to an 8 inch circle. Place the circle of almond paste on the cake batter in pan. Cover with remaining cake batter.
Bake in the preheated oven for 2 1/2 hours, or until evenly brown and firm to the touch. If the cake is browning too quickly, cover with foil after an hour of baking. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Set oven to broil.
When the cake has cooled, brush the top with warmed apricot jam. Roll out 1/3 of the almond paste into an 8 inch circle and place on top of cake. Divide the remaining 1/3 of almond paste into 11 pieces and roll into balls. These represent the 11 Apostles (excluding Judas.) Brush the almond paste on top of cake with beaten egg. Arrange the 11 balls around the outside edge on the top of cake. Brush the balls lightly with egg.
Place cake under the broiler for 8 to 10 minutes, or until almond paste is golden brown.
