Tuna Patties With Ranch Dressing

3-4 servings 8 patties
10 min prep

2 (6 ounce) cans tuna, drained
1 1/4 cups breadcrumbs
3/4 cup shredded cheese (mozzarella or cheddar)
1/4 cup mayonnaise or Miracle Whip
1 egg
1/3 cup ranch dressing (low-fat works fine)
1/2 cup finely chopped onions
1/2 cup finely chopped green peppers
vegetable oil

Set aside 3/4 cup of the breadcrumbs.
Combine all ingredients, except oil and reserved breadcrumbs.
Form 8 patties, coating each side with the reserved bread crumbs.
Heat appx.
1 tbl.
oil in nonstick skillet over medium heat.
Cook 4 patties for 4-5 minutes on each side.
You may need to add additional oil when you're frying them.
Add more oil and cook remaining 4 tuna patties.
Serve immediately.

Tuna Pockets

1 cup chopped cucumber
1 cup chopped tomato
1 can (6 oz.) white tuna in water, drained, flaked
1/4 cup KRAFT Light Ranch Reduced Fat Dressing
4 whole wheat pita breads, cut in half
4 large lettuce leaves

MIX cucumber, tomato, tuna and dressing.
LINE pita bread halves with lettuce; fill with tuna mixture.

You mean you have never heard of the classic tuna and noodle casserole? If not, boil some noodles until they are just tender and not mushy. Add a can of cream of mushroom soup, diluted with a half can of milk. Add the tuna. Mix all ingredients together and put in casserole. I like to toss in a handfull of cubed or shredded cheese. Top with crushed potato chips or canned french-fried onions. Bake at 350 degrees for 25-30 minutes. Bon Appetit!

Tuna Surprise

Makes 4 servings

Ingredients:

4 ounces egg noodles
1 can cream of mushroom soup
1/3 cup milk
7 ounce can tuna, drained and flaked
1 cup peas, cooked
regular potato chips

Preparation:

Cook noodles in boiling salted water until al dente, 7 to 10 minutes.

While noodles are cooking, combine soup, milk, tuna and peas.

Rinse noodles with warm water and drain well. Fold noodles into tuna mixture, pour into a greased 1-quart casserole.

Sprinkle crushed chips on top and bake at 350 degrees F. about 30 minutes.



Tuna Steaks Glazed with Ginger, Lime and Soy

Ingredients:

4 Tuna steaks, 1 in thick
2 tbsp. Lime juice
1 1/2 tbsp. Soy sauce
2 Garlic cloves, crushed
2 tsp. Ginger, grated
1 1/2 tsp. Sesame oil
1 tsp. Chili pepper, minced
1 tsp. Sugar

Instructions

Whisk ingredients in small bowl. Pour marinade over fish and turn to coat.

Cover and let marinade for 30 min. at room temperature, or 1 hr. in the refrigerator, turning fish over once or twice and spooning marinade over.

Preheat broiler. Broil fish 4 in. from heat source until glazed and golden, basting twice with marinade, approx. 3 min.

Carefully turn fish over. Broil until glazed and just cooked.

Transfer to plate and spoon juice over top.

Tuna a la king--in a white sauce (using canned tuna). Serve over biscuits or just over toast, it's pretty good.

2 tbsp butter
2 tbsp flour
1 chicken bouillon cube
1 cup milk
1 cup water
1/2 c frozen peas
1/2 c sliced mushrooms (if desired)
1 can tuna
Salt/pepper

Melt the butter in a saucepan, add the flour, bouillon cube, and mushrooms if using--stir over med heat for 2 or 3 minutes. Remove pan from heat and stir in broth and milk. If the sauce is too thick, add more milk as needed. Return to heat and bring to low boil, until sauce thickens. Season to taste with salt and pepper. Add frozen peas and continue to cook on med-low until the peas are cooked. Finally, dump in your can of (drained) tuna and stir until the chunks are well broken up and blended into the sauce. Serve over biscuits, toast, English muffins, etc.

Tuna Noodle Casserole

INGREDIENTS
1 (8 ounce) package wide egg noodles
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt (optional)
1 cup milk
1 cup shredded sharp Cheddar cheese
1 (6 ounce) can tuna, drained
1 (15 ounce) can peas, drained

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 2 quart casserole dish with cooking spray.
In a large pot of salted water, boil noodles until al dente. Drain well.
In a medium saucepan, combine flour, butter, and salt. Stir until butter is melted and ingredients are combined evenly. Add milk, and whisk until the sauce thickens (usually it is at the proper consistency by the time it begins to boil). Add cheese to mixture, and whisk until cheese is melted and mixture is well blended. Stir in tuna, peas, and noodles. Spread evenly in prepared dish.
Bake in preheated oven for 30 minutes.

tuna pleat! Mix Tuna and mayo and any kind of peppers or celery and then place the mixture on some ready made puff pastry, score the pastry and make into a long (kind of sausage roll shape) by folding up each section, makes it look like a pleat. Add sesame seeds on the top and bake in the oven till risen! Yummy!!

Salad
1 1/2 to 2 lbs. potatoes, peeled
1/2 C. bottled, reduced-calorie ranch dressing
1 to 2 t. curry powder
2 (6-oz.) cans tuna (chunk or filet) packed in water, drained
1 C. sliced green onions with part of tops
1/2 C. pitted olives, chopped
4 to 6 C. mixed salad greens
6 plum tomatoes, quartered lengthwise
3 hard-cooked eggs, quartered lengthwise
Whole green beans, cooked

Bring water to a boil in a large pan over high heat. Meanwhile, cut the peeled potatoes into 1/2-inch cubes. Add cubed potatoes to boiling water; return to boiling and simmer 5 minutes or until tender, but firm. Drain potatoes. Set aside.

In a large bowl, mix together the ranch salad dressing and curry powder to taste. Stir in tuna, green onions and olives. Gently stir in the warm potatoes.

To serve, arrange greens on a platter or on individual dishes. Top with the potato mixture, then garnish with tomato wedges and egg quarters. Surround the edge of the plates with cooked green beans, using only fresh, untrimmed ones, as young and slender as you can find.

Faster sauce for Pasta
Put a can of tuna in sauce tomato and basil and cook for 7/8 minute. It's ready for pasta.

1 can of tuna in water drained
1 can of cream of chicken or any other creamed soup
1 bag of pasta

Cook pasta until almost done. Add tuna without water. Then add the creamed soup. Add just a little water, and cook for a few minutes. If you want top with Parmesan cheese or grated cheddar. Serve with Garlic bread. Yum Yum

You are in luck! This is my sister's creation:

-1 can canned tuna

-I tbsp olive oil (to taste)

-1/2 cup cannelini beans

-optional: black olives and mushrooms

mix all of them together and put them on a sandwich or over lettuce for tuna salad. Northern Italian goodness!

Mix 2 cups cooked pasta shells with a can of tuna, a handful of green peas, 1/2 cup mayonnaise, salt/pepper to taste. Serve on a bed of green leafy lettuce.
