Olive oil raises your good cholesterol and helps lower your bad so add 2 tablespoons to a pan. Saute diced onions until they begin to turn translucent. Then add 1 clove diced garlic and saute for 1 minute not more or garlic will turn bitter. Add some fresh chopped baby portabella mushrooms and cook until they realease their moisture then add the fresh spinach ad cook until wilted. YUM!

Sautéed Spinach
Ingredients:
4 tablespoons olive oil
3 cloves garlic
1 pound spinach, washed
juice from half a lemon
salt and pepper to taste
1 tablespoon extra virgin olive oil (optional)
Preparation:
Heat the oil in a sauté pan large enough to hold all the spinach. The heat should be medium high. Add the garlic and cook for 1 minute. Do not let it burn.
Add the spinach and cook while stirring continuously until the spinach wilts. Remove the pan from the heat.
Season with salt and pepper, squeeze the lemon on top and finish with the extra virgin olive oil.

When I watch the people on the Foodnetwork make spinach, they use olive oil instead of butter since it is a lot better for you. They saute the garlic in some olive oil, then throw all the spinach in the pan (it may seem like it won't fit, but it will shrink) pour a little bit of olive oil, and seasoning to it. It will cook down and shrink. Very good for you.

just wilt the spinach in a pan with a little bit of water and then chop some garlic. use a smidge of butter and for flavor add pepper and vingar. to eat it fresh try a nice raspberry vinagrette or make a spinach salad using fruit instead of bacon.

In a skillet, lightly saute the spinach in a small amount of olive oil and garlic (garlic is good for you), just until the leaves are wilted. Olive oil is better for you than butter, and you don't need much to make this recipe. It's very easy and very tasty.

You don't always have to cook spinach. You can eat it like a salad. Either add it to a salad with lettuce, or leave the lettuce out entirely and use the spinach as the "greens." You can use spinach on sandwiches, as well, and stir frys.

Strawberries and slivered almonds with balsamic vinegar and olive oil dressing spiced as you like it - oregano, basil, etc. I know, it sounded gross to me the first time too but it is GOOD!
We've been doing the cooking healthier thing too and spices are what makes up for not using butter and other fats. We use Penzy's - they're about the same price as grocery spices, but seem fresher and tastier. They offer blends that are out of this world delicious!

Steam the spinach until cooked then add a few drops of soy sauce and a few drops of Chinese oyster sauce and mix together, beautiful.

Spinach makes a great salad, I use it in stir frys,it's wonderful in quiche,there are a million good things to do with spinach. Salads and stir frys are 2 of my favorite.
