Nothin' to Fret about Apple Fritters

Ingredients:

Vegetable oil, for frying
4 apples, Red or Golden Delicious or, 2 of each
2 teaspoons lemon juice (1 wedge will do)
2 cups complete pancake mix, any brand
1 1/2 cups water
1/2 teaspoon ground nutmeg, or equivalent of freshly grated
1/2 cup confectioners' sugar

Heat 1-inch vegetable oil on moderate to medium high heat. If you wish to test the oil, add a 1-inch cube of bread to hot oil. If it turns deep golden brown in color in a count of 40, the oil is ready.

Core apples with an apple corer. Cut into 1/4-inch thick slices across, forming apple rings. Sprinkle sliced apples with the juice of a wedge of lemon to prevent browning.
Mix together pancake mix and water, season with nutmeg.

Place confectioners' sugar in a sifter or a tea strainer. Place a piece of cardboard or brown paper sack on a work surface for draining fritters. Working in small batches of 5 to 6 slices, coat rings of apple in batter, and fry for 2 to 3 minutes, until evenly golden brown. Transfer to paper bag or towels to drain. When all the fritters are cooked, let oil cool before discarding.

Top fritters with confectioners' sugar and transfer to a serving platter.

FANTASTIC APPLE FRITTERS

Combine in bowl 1/2 cup milk, 1 egg, and 2 tablespoons butter. Add grated rind and juice from 1/2 an orange, 1/2 cup of chopped apples (skin can be left on) and 1/2 teaspoon vanilla. Sift together 1 and 1/2 cups cake flour, 1/4 teaspoon salt and 1 tablespoon baking powder. Stir in milk mixture with a spoon until blended. Drop batter by spoonfuls into 1/2 inch hot oil. Fry to a golden brown. Drain.
Makes about 24 fritters.

APPLE FRITTERS
2 c. Bisquick
2/3 c. milk
1 egg, just add
2 c. apples (chopped sm.)
Powdered sugar to sprinkle on apple fritters
Mix Bisquick, milk and egg until well blended. Stir in apples. Drop by small teaspoonfuls into deep hot fat (360-375 degrees). Turn and fry until golden brown on both sides. Drain on paper towels. Serve hot with syrup or powdered sugar.
Makes 24 servings.
To use a minimum of fat for frying, melt fat in a deep 2 or 3 quart kettle which is only 7 or 8 inch wide across the top. Two cups of fat will give a depth of about 1 inch, sufficient for frying.

INGREDIENTS:
1 cup sifted all-purpose flour
1/4 cup sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
1/3 cup milk
1 egg
1 cup finely chopped apple
1/2 cup confectioners' sugar, sifted
PREPARATION:
Sift together the flour, sugar, salt, and baking powder. Add milk and egg; beat until batter is smooth. Fold in chopped apple. Drop by teaspoonfuls into deep hot oil -- about 370° and at least 2 1/2 to 3 inches deep -- and fry for about 2 to 3 minutes, until nicely browned.
Drain well on paper towels then roll in confectioners' sugar while still warm.

Try the following

Apple fritters
vegetable oil, to deep fry
100g/3½oz plain flour
2 tsp baking powder
2 tsp cornflour
milk, to bind
½ apple, chopped
icing sugar, to dust

Method
1. Heat a heavy bottomed saucepan, half of vegetable oil, until a breadcrumb sizzles in it. (CAUTION: hot oil can be dangerous! Do not leave unattended.)
2. Meanwhile, make the batter by whisking the flour, baking powder and cornflour together in a bowl, with enough milk to make a batter of double cream consistency.
3. Add the apple to the batter and carefully place tablespoonfuls of the mixture into the hot oil to fry for 1-2 minutes, or until golden.
4. Carefully remove and drain on kitchen towels.
5. Dust with icing sugar to serve.

Apple fritters with Greek-style yoghurt
For the apple fritters
100g/3½oz self-raising flour
1 tsp caster sugar
small bottle sparkling water
vegetable oil, for deep frying
1 apple, cored, cut into ½cm/¼in thick rings
To serve
Greek-style yoghurt

Method
1. For the fritters, place the flour and sugar into a bowl and whisk in enough sparkling water to make a batter the consistency of double cream (you may not need it all).
2. Place the vegetable oil into a deep, heavy-bottomed saucepan and heat until a small cube of bread sizzles and turns golden when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
3. Dip the apple rings into the batter to coat, shaking off any excess, and carefully place them into the hot oil. Deep fry until crisp and golden-brown, then remove from the oil with a slotted spoon and drain on kitchen paper.
4. To serve, place the fritters onto a plate with a dollop of Greek-style yoghurt.


Or Sweet apple fritters
½ apple
2 egg whites
75ml/2¾fl oz water
100g/4oz flour
vegetable oil, to deep fry
½ tsp cinnamon
100g/4 oz sugar
small tub Greek yoghurt

Method
1. Slice the apple into discs 1cm/½in thick.
2. Make the batter by whisking the egg whites to a soft peak and folding in the water and flour.
3. Heat a deep fat fryer to 190C/375F or third fill a large pan with vegetable oil. To test if oil is to the correct temperature, drop a small cube of bread in the oil, if it sizzles and turns golden the oil is ready to use. (CAUTION: hot oil is very dangerous. Do not leave unattended.)
4. Dip the apple slices in the batter and carefully fry them for 3 to 4 minutes until golden brown.
5. Blend the cinnamon and sugar and carefully coat the fritters.
6. Serve with a dollop of Greek yoghurt

or Cinnamon apple fritters
vegetable oil, for deep frying
2 apples
110g/4oz plain flour
1 tsp cornflour
pinch of caster sugar
salt
1 egg
approx 150ml/¼ pint milk
To serve
caster sugar, to sprinkle
cinnamon, to sprinkle
double cream, to drizzle
honey, to drizzle

Method
1. Heat the oil for deep frying to 180C/350F, or until a cube of bread dropped in becomes golden in 30 seconds.
2. Remove the core from the apples using a corer.
3. Slice the apples into rings.
4. Place the flour, cornflour, sugar and salt into a large bowl. Gradually beat in the egg and enough milk to form a batter.
5. Dip the apple rings into the batter to coat well and fry the fritters for 3-4 minutes or until golden.
6. Remove the fritters from the oil with a slotted spoon and drain on absorbent kitchen paper.
7. Sprinkle generously with sugar and cinnamon.
8. Serve drizzled with cream and honey
