I am interested in recipes you tried, I can find plenty of recipes online, but I tried couple of them and it wasn't very good. Thanks!

Spinach Lasagna

Ingredients

(6 servings)

3 tb Vegetable oil
1/2 lb Lasagna noodles
2 ea Garlic cloves, minced
1 md Onion. chopped
2 ea Tomatoes, chopped
10 md Mushrooms, sliced
1/2 ts Oregano
1/2 ts Basil
1/2 ts Rosemary
2 tb Chopped fresh parsley
1 lb Washed spinach
1 c Ricotta cheese
1/2 c Grated parmesan
8 oz Grated mozzarella


Instructions

Cook noodles till al dente. Drain & set aside. Preheat oven to 350F.
Heat oil in a large skillet & saute onion, garlic, tomatoes & mushrooms. When onion is translucent, add herbs. Chop the spinach & add to the skillet & stir till it is wilted. Simmer.
Reserving 1/2 c mozzarella, in a large bowl combine the cheeses. Pour vegetables into the cheese mixture & mix thoroughly. Layer noodles alternately with the vegetable-cheese in an 8x13-inch baking pan. Top with reserved mozzarella & bake for 30 minutes. Let sit for 5 to 10 minutes before serving.

The simplest way I have found to make lasagna is this:
put some sauce on bottom of pan
layer uncooked lasagna noodles
ricotta cheese ( mix this with a mixer and add these ingredients; ricotta, eggs, parmesan cheese, salt, pepper. mix until creamy for easier spreading) chop fresh spinach and fold into ricotta mixture
mozzarella cheese
sauce
and continue layers until done
top with mozzarella cheese and cover with plastic wrap and foil. Bake at 325 degrees until internal temp is 140 degrees.
remove from oven and let sit for 20-30 minutes before cutting. Works for me and is very good. The moisture from the sauce cooks the noodles and they are not soggy.

Just use your favorite lasagna recipe and add the spinach!
