he said he was already taken. Why would a guy act like this when he's off limits?

Just because a guy has a partner it doesn't mean he cant find someone else attractive. Hes just being nice and polite i think you should respect his honesty as if he was with you you would like him to do the same. he has shown you that he is a decent guy but i think you are more concerned about yourself and not thinking about his situation? He may not like you in the way you think he does he might like your company and enjoy conversations with you as a friend and blush as he made a genuine mistake don't be upset be his friend he sounds like a Gd person*
