Until it starts to smell or taste or look bad. Until then use as much as possible, extend life by keeping in refrigerator.

Freezing and putting bread in the fridge actually shortens the life span of bread so if it is a bread that normally would last a week...say 4-5 days.

It really depends on the bread. It may not have the texture you want from fresh bread, but as long as it isn't molding you can always use it for toast or croutons.
