Also, does a dual voice coil mean that I have to use two channels on my amplifier?

its just the amount of resistance a woofer needs. for example if its a 4 ohm woofer at wants 100 watts rms, you look for a amp that puts out 4 ohms at 100 watts.

no, a dual voice coil just means that you can wire it up for 2 or 8 ohms. they just give you more options. one amp will run a DVC.

That is the impedence that the voice coil present to the amplifier. A high ohmage has lower watts but runs cooler, and vice versa for the low. What you need to do Is buy an amp first. If the amp is bridgeable to 4 ohms then look for the number of subs you want. You could use 2, 2 ohm subs to present a 4 ohm load. Never go with too low an ohm load on an amp because this will burn an amp and make it run very hot.

2, 4, and 8 Ohm is the impedance of the subwoofer's voice coil. It is only for matching the sub with power amplifier, because usually an amp have different output capabilities at different impedance. For example, an amp that specs 2x100Watts at 8 Ohms, usually can pump 2x200Watts at 4 Ohms, and 2x400Watts at 2 Ohms. So it will have the capability to give more output at lower impedance. But it also have the limit of how low the impedance it can handle. Too low and it may heat and blow itself out.
Now, if your sub is 4 Ohms and 100W, you should use a power at least 100Watts at 4 Ohms per channel, or with 4 Ohms bridge output of 100Watts

Usually subs with different impedance (with the same type/size) have the equal performance.
