Vanilla Ice Cream
INGREDIENTS
2 cups milk
3 cups cream
1 tbsp custard powder
1 tbsp vanilla
360 gm sugar
METHOD
Mix the custard in 1/4 cup of the milk and keep aside.
Heat the rest of the milk and sugar together. Let the sugar dissolve and mixture come to a boil.
When it boils, add the custard mixture and bring to a boil again, simmer for half a minute shut the heat and cool to room temperature.
Transfer on to a container with a tight lid.
Freeze till almost set, take out and whip up with a hand beater and place back into the freezer. The lid should always be tightly shut, as this avoids crystals from forming.
Whip once more when almost set and place back in the freezer. Alternatively, freeze in an ice cream machine according to instructions.

Easiest recipe ever and foolproof!
2 eggs, 200grams caster sugar, 500ml thickened cream or double cream, 250ml full fat milk. Beat eggs and sugar until ribbony and then add cream & milk and beat until combined. You can add flavourings to it now, but if you are going to add cocoa powder or the like you MUST sift it first to avoid lumps. I often just crush up some Oreos or similar and add or some home made praline crushed up, then just put in an air tight container and in the freezer and mix with and electric mixer just when it starts to solidify, you will need to do this for about 2-3 hours at regular intervals, say every half hour or so but you will always have a creamy ice cream or you can buy a ice cream maker from your local dept store and it will do all the work for you...MMM yummy. As a kid one of my fondest memories was making ice cream. We uses to have a maker that had a gallon or so container. There are all kinds of recipes around. After you put the ingredients in the container, you mount it in the wooden outside container. Put the handle/cover on and then put layers of ice sprinkled with ice cream salt, I suppose any salt will work but not as well, More ice, more salt, etc to full. Then the fun part started. Any old rug was put on top and the kids would take turns setting on it so the handle stayed on. The adults took turns turning the crank. Occasionally you would add more ice and salt. I suppose you could find one of those old fashioned ice cream makers in an antique store.
Later on they made electric ice cream makers taking all of the work and fun out of it.
My grandmother even used to use a pail with a jar of ice cream ingredients in it. She would even use snow between the containers with table salt. Then the ice cream was swished back and forth in the ice and salt. It wasn't nearly as good as the other ice cream since it seemed to be more icy. Never fill the ice cream container too full because it would expand too much and make a mess.
Ice Cream has been around for centuries.

Five Minute Ice Cream
INGREDIENTS
1 (10 ounce) package frozen sliced strawberries
1/2 cup sugar
2/3 cup heavy cream
DIRECTIONS
Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped. With the processor running, slowly pour in the heavy cream until fully incorporated. Serve immediately, or freeze for up to one week.

CHOCOLATE ICE-CREAM
For about two quarts and a half of cream use a pint and a half of milk, a quart of thin cream, two cupfuls of sugar, two ounces of Chocolate, two eggs, and two heaping tablespoonfuls of flour.
Put the milk on to boil in a double-boiler. Put the flour and one cupful of the sugar in a bowl; add the eggs, and beat the mixture until light.
Stir this into the boiling milk, and cook for twenty minutes, stirring often.
Scrape the chocolate, and put it in a small saucepan. Add four
tablespoonfuls of sugar (which should be taken from the second cupful) and two tablespoonfuls of hot water. Stir over a hot fire until smooth and glossy. Add this to the cooking mixture.
When the preparation has cooked for twenty minutes, take it from the fire and add the remainder of the sugar and the cream, which should be gradually beaten into the hot mixture. Set away to cool, and when cold, freeze.

First add suger, cream and custard powder in hot milk, mix it well, and put in freezer. Use only best quality milk, without adding any water. If you wish, you may add edible colour, crushed elichee etc. Your ice cream will be very hard.
For softening it put pieces in mixer, crush well and again put in freezer. For better results, follow same proceedure twice. Now you get original ice cream, then you may add dry fruits etc. Total time will be about 4 to 6 hours.
If you have Softel ice cream maker machine, it requires seperate AC supply for coninuous crushing work, and it gives same result. Softel is to be put in freezer, and two thin electric wire comes out from freezer.

How to Make Ice Cream With Snow
Steps
1.Fill the gallon size bag half full with snow or crushed ice.
2.Add about 6 tablespoons of salt to the snow or ice. Seal the bag and mix for 5 minutes. Wear your gloves when you're handling the bag.
3.Use the quart size zipper-lock bag to mix the following ingredients:
o1/2 Cup Half & Half (or milk)
o1 Tablespoon Sugar
o1/2 teaspoon Vanilla Extract

Seal tightly, allowing as little air to remain in the bag as possible. Too much air left inside may force the bag open during shaking. Place this bag inside the other quart size bag, again leaving as little air inside as possible and sealing well. By double-bagging, the risk of salt and ice leaking into the ice cream is minimized.
5.Place the two bags inside the gallon size bag with the ice and seal the bag. Wrap the bag in the towel or put your gloves on and shake and massage the bag, making sure the ice surrounds the cream mixture. Five to eight minutes is adequate time for the mixture to freeze into ice cream.
6.Feel the consistency of the ice cream mixture through the bag. When it feels frozen enough to eat, remove the inner bags and rinse it well with water. You don't want any salt water accidentally getting into your ice cream.
7.Pick up your spoon and eat the ice cream right out of the bag!
Tips
·Freezer bags work best because they are thicker and less likely to develop small holes that will cause the bags to leak.
·You can get away with using regular Zip-loc bags for the smaller quart sizes, because you are double-bagging.
·If you plan to do this indoors, use gallon size freezer bags.
·Add well beaten raw egg for greater color, nutrition, and flavor. (Remember - raw eggs can carry salmonella.)
Warnings
·Make sure to wear gloves, because the salt and ice mixture gets down to about 14°F (-10°C)!
·Don't eat too much of the snow, because of the dirt and pollution in it. If you really want to see what's in the snow you're going to eat, compact a bunch of snow, and put it in a glass jar, and observe. Not for the easily disgusted...
