Sanskrit is a wonderful language conveying different meanings for the same alphabet or word depending upon the perception of each individual.
I do not find any difference between the two:
SAT : The one that remains constant and permanent without any change. It is only truth that is God. It is nothing but SATYAM.
CHIT : The Chaitanya, consciousness. This is always good and bestowing all beneficial things. Therefore it is called SIVAM.
ANANDA : Blissful state. This is called Sundaram. In normal sense what is beautiful is termed as sundaram. This is not physical beauty but spiritual. If one reaches this level it will be so blissful and beautiful none wants to come back. SUNDARAM.
I feel both convey the same meaning.

Sad chit anandam is the highest and purest state of existence a human being tries to attain and maintain.
It helps a human being to feel the essence of God through the self development of this imperfect nature. This not only cleanses the body , mind and soul , but also transforms an ordinary human being , to a super human being, who is always intoxicated with the love, bhakti and purity of oneness with the God.
Satyam Shivam Sundaram is the propagation of the ultimate belief of our religion , where we say that Shiva is Satya (the ultimate truth), Shiva is sundar (the ultimate beauty) and Shiva is Shiva (the ultimate existence).
So this second one correctly defines what and how God is perceived in our religion.
Armed with this ideology , it helps us to attain this ultimate state of Sadchitanandam !

Describing Divinity (call it Godhood) at intellectual level is Sath (existence - consciousness), Chith (Knowledge of Truth - Jnaana) and Ananda (Bliss or state of total contentment).. that is why we say God is omnipresent (exists everywhere is synonymous with saying everything is God), omniscient (all knowing because He designed and made everything) and omnipotent (hence no worry and fully contented)...
Describibg God at emotional level is Sathyam (the unchanging), Shivam (auspicious) and Sundaram (Beauty - without any blemish that created world acquires)... Here we come down from the abstract level of intellectual expression to the emotional - easily understood - level of the divine perciption....
So both ways of describing the Divine are correct

Sat-Chit-Ananda is triple consciousness. Sat is existence, Chit is consciousness and Ananda is bliss. A sort of three-in-one. God-consciousness.
Satyam Shivam Sundaram. Truth (Satya) is God (Shiv) and God (Shiv) is Beautiful(Sundar).
I myself vote for the Sat-Chit-Ananda, because it gives a three-fold description which, to my mind is more than just stating: God is truth. But I guess its a matter of taste.

Both are equally valid, though I tend to side with the first one because it denotes all the qualities of God in one word. It encompasses being, consciousness, and pure bliss.
