Cooking Rib eye, cheesy mashed potatoes, mushrooms fried in butter and garlic.

Need an idea for one more side.

Think you need something with color such as green--broccoli, green beans with bacon bits, asparagus, peas, maybe creamed with instant chicken soup. Use hollandaise sauce maybe for the the asparagus or broccoli.

Of course a green salad could be nice. A beet salad or side dish or even soup would really add color. The beet borchet soup is served cold with a dolip of sour cream. You don't have to be jewish to enjoy. Get it all bottled at Albertson or you local grocer.

Baby Spinach & Rocket Salad. Combine handful of baby spinach & rocket in a large salad bowl, add sliced cucumber and blanched asparagus, anything else that you might like and dress with Olive Oil and Balsamic Vinegar, just don't go too heavy on the balsamic only a drizzle.

asparagus - in season right now and reasonably priced. Cut the tough end off, heat a little olive oil in a pan and saute the spears a minute or two. Sprinkle over about 2 tsp soy sauce and cover. Let steam a few minutes - you want these crisp tender. Serve simply with coarse ground black pepper. It will look and taste great with your other foods.

If you can get anything close to a decent tomato (maybe a Roma?) I would go for tomato and green pepper salad drizzled with a little olive oil and balsamic vinegar.
If you would prefer something hot - cook green beans with onion and stir in either a little chopped tomato and sprinkle with basil or add some salsa and heat through.

Salad or a lightly steamed veggie of your choice.
By the way-corn,peas and beans do not qualify nutritionally as vegetables.

You need a vegetable. Such as, peas, green beans, corn, cream corn, or a mix of stuff.
