Hey,
I have a question. What's the best, most creative way to say I love you to my fiance as I will see her tomorrow. Over the weekend, we went through rough time, and it was sad, and I want to make it up to her for the problems and pain I caused. The thing is we will be together for few hours, but we will be in the car, on the back seat just talking and cuddling, and I really want to surprise her and shower her with my love that will make her have butterflies and make her smile.

Not many guys admit their mistakes.
Just apologise. Whatever you did wrong, or what was bugging you, explain what you did wrong and why you did it. Just make sure not to blame it on someone else or somebody else.
Let her know you care. Hold her hand, apologise, kiss her softly. Hopefully everything will work out on its own.

Be serious and act as if things are still rough between you two. She'll feel the tension and when she does just flip the script by givin' her some good lovin! You don't even have to say anything. As a matter of fact don't say anything. She'll feel very relieved that the hard times are put behind and it is time you must reconcile. Don't let her see it coming though, and don't get her anything tangible, because she is your fiance; she is not at that girlfriend stage anymore.

hon, just be completely honest with her and genuine when you say 'i love you.' do not just say it because you think it will please your mate/partner/spouse; make eye contact and say it because you mean it.
