My Roti paratha don't seem as flaky as the ones in indian restaurants. Need help please.

Paratha Roti (Buss-up Shirt):
Recipe serves 4

4 cups flour
4 tsp. baking powder
1 tsp. salt
1 1/2 oz margarine, butter or ghee
1 3/4 cups water

What tuh do?
1. Sift flour, baking powder and salt into a large bowl for mixing
2. Add enough water to form a smooth soft dough
3. Knead and leave for about 1/2 hour, covered with a damp cloth
4. Knead again, then divide dough into 4 balls
5. Flour kneading area and roll dough into ~8" circles
6. Spread liberally, margarine/butter/ghee over dough and sprinkle w/ flour
7. Cut dough from the centre to edge.
8. Roll dough tightly into a cone shape, then press peak of cone into centre and flatten
9. Leave again for 1/2 hour.
10. Sprinkle flour on kneading area and roll out till very thin
11. Bake on a moderately hot tawah (large skillet if you don't have one), coating dough on both sides with oil as it cooks
12. Turn on both sides and cook about 1 1/2 minutes on each side
13. Remove from tawah and hit with wooden palette until flaky

Take fresh flour & sieve it well. Add a pinch of salt. Add water in small measures & make mix till u get a consistent dough which can be rolled into small balls. Take one of these & with a rolling pin roll it with constant pressure adding a pinch of margerine to prevent sticking to the wooden roll base. When it is becomes a circle of about 8 inches diameter put it on a frying pan( flat base) which has already been put on a medium flame earlier. Within half minute turn it over & heat the other side. Now take half a tea spoon of butter or margarine( don't overdo it if u r watching those calories)& run it all along the side till it percolates to the face in contact with the frying pan. Keep tapping it till a flufffiness appears & flip the roti paratha the other way & repeat the execise with butter etc. When both sides have become brownish & fluffy take it off the flame & have ur fill with some curd/yogurt in accompaniment.

I have an idea.Maybe you can ask the recipe of roti parantha from any restaurant whose roti parantha are famous else you there are man sites like google and yahoo where you can type the search term as "recipes" and then type 'roti parantha'
