As you have 640 square feet to paint you will probbably get away with the quantity you are thinking about x 1.75.
I would recommend enough paint to cover 10% more or enough to cover 700 square feet

You didn't say how many square feet a gallon covers

I'd sell them 10gallons, because if they can't figure out a simple problem like this, they will take 10 gallons. When they try to bring it back I'd tell them their walls are going to be splotchy in a few weeks if they don't use the rest and maybe they'll need more if it gets warmer next summer. Remember I'm trying to sell paint, and they ain't too smart. The whole world is lining up to take advantage of the "not to smart". So the moral is keep studying!

walls = 2*(16+12)*8 = 448 sqft
ceiling = 12*16 = 192 sqft

Ceiling - 12ft x 16ft =192sq ft
Walls - 2(12ft x 8ft) = 192sq ft
Walls - 2(16ft x 8ft) = 256sq ft

192sq ft + 192sq ft + 256sq ft = 640sq ft

You need to sell 2 gallons, which would be enough to cover 800 sq ft.(there will be leftovers).

i would sell them 4 gallons but it should only take a tad over 3 and 3 quarters so that leaves some for touch ups for later

walls = 1536 ft2
