Corn Fritters
Ingredients
1 cups grated fresh corn
1 egg, beaten
1/2 teaspoon salt
1 teaspoon sugar
pinch fresh ground black pepper
1/4 cup flour
1 teaspoon dried basil
1/4 cup unsalted butter or shortening
confectioners' sugar for sprinkling
Preparing
In a bowl, thoroughly mix the corn, beaten egg, salt, sugar, pepper, flour and basil. (You may use an electric blender or food processor to mix these ingredients).

In a large skillet, melt the butter or shortening. Drop the corn mixture by tablespoons into the hot butter. Fry on each side until golden brown. Sprinkle confectioners' sugar over the fritters and serve warm.

1 cup of fresh corn kernels
1/2 cup of butter
1 cup of all-purpose flour
4 eggs
Corn oil for frying, heated to 365ºF.
Cook corn until soft in boiling salted water in a saucepan, drain reserve 1 cup liquid. Melt butter with corn liquid in saucepan, add flour and cook, stirring rapidly. until mixture is smooth and rolls away from the sides of pan. Remove from heat and add eggs, one at a time, beating well after each addition. Stir in cooked corn. Drop batter by spoonfuls into heated oil and fry until golden and well puffed. Drain on absorbent paper. Serve hot. Makes about 30 fritters.

2 cups flour
1 tablespoon baking powder
1/2 tsp. salt
1/4 cup sugar
2 eggs, beaten
1 cup milk
1/4 cup melted butter
1 can whole kernel corn, drained
(or about 1 1/2 cups frozen, thawed or fresh)
powdered sugar or syrup

PREPARATION:
Sift flour, baking powder, salt and sugar. Combine eggs, milk and butter. Fold in dry ingredients [add more or less flour - enough to bind batter]; add corn last. Drop by tablespoons into hot vegetable oil and deep fry about 5 minutes or until golden brown. Sprinkle with powdered sugar or serve with syrup. Serve corn fritters warm.

1 can creamed corn
1 small/med onion diced
1 cup tasty cheese grated
1 cup self raising flour
1 large egg
salt and pepper

mix lightly
olive oil in large frypan heat til oil bubbling
place tablespoons of mixture and cook til golden brown on each side
they sort of go like pikelets do when ready to be turned
drain before serving
