Empanadas - just a warmed corn tortilla folded over some slices of montery jack cheese, heated in a skillet with a bit of oil till melted. Then you can get all kinds of carried away and add things to it, as the fridge sees fit - some cilantro, onion, shredded chicken (doesn't everyone have that sitting in their fridge?), salsa, avocado, whatever. It's a great place to start and ready in minutes - imperative for one with the munchies!

popcorn, peanut butter and crackers, my son will make a box of kraft mac n cheese for a late night snack I know because the sticky pot is on the stove in the morning lol

Don't you hate when that happens....well I always make Cinnamon toast.Just take a slice of toast and butter it,sprinkle Cinnamon on it and a pinch or two of sugar.This and a hot chocolate is great.Hope you enjoy it.
