Tacos do not have such an illustrious beginning as ,say, the sandwich -the Lord of Sandwich "inventing " it in a hurry-but I am pretty sure that as long as humans have eaten someone has come up with the idea of slicing something and eating it in something else.Take sushi, for instance, lets roll up a little protein with some sticky rice and here we are, on the go. Tacos follow the same rule, take a few odds and ends and roll them up, though they are not exactly perambulating food, a taco needs to be immediatly eaten or else the stuffing -meat or vegetables with sauce- will get the tortilla soggy and all shall disentegrate. Which, of course, guarantees freshness. Tortillas are made from maize, or corn, in Mexico, except in the northern states of Mexico where flour is favoured. I wish I could give you a great story of how the first tortilla was made, but I've yet to hear it....although, according to Mexican and Mayan traditions, the first men were made of maize (the previous versions, made from mud or reeds, proved too flimsy for survival).
Please, please DO NOT confuse anything from Taco Bell with a taco. There is no such thing as a taco shell in MExico...perhaps it is a gas station? In any case, not the real thing.

Walter Kaszko is the inventor of the Taco Polaco, a combination of Polish sausage (aka kielbasa), lettuce, diced tomatoes, grated cheese, sliced jalapeños, diced onions, and chopped cilantro.
