I followed a bruschetta recipe as follows: diced 1 red onion, chopped 4 ripe tomatoes, added 2 tbsp olive oil, basil leaves and seasoned this with salt and pepper. I lightly toasted some bread, rubbed the bread with a clove of garlic, topped with onion and tomato mixture, placed it under the grill, to serve warm.

However, it just didn't taste right. I couldn't taste the garlic on the bread or the tomatoes, all I could taste was the onion.

Does anyone have any other variations?

Use less onion, chop garlic fine, and also use a little balsamic vinegar, also use fresh basil and kosher salt. I use very little onion if any at at all.

My first time making bruschetta was my greatest! I was invited to alot of Parties because of this Recipe!!! The key is using garlic that is mashed almost to a paste consistency, (about 2 oz). I don't use onion because garlic is the STAR of my bruschetta! Then dice 2 medium tomatoes, add Basil- I like alot! I also thinly slice small Roma tomatoes into circles to add dimension to my topping, add Olive Oil, and Salt and Pepper to taste. Toast your Bread lightly on both sides before adding topping. After topping is added, grate some fresh asiago or Parmesan cheese on top. Place under broiler for just a minute only long enough to set the cheese. Bon Apetit!

Try dicing the garlics and topped it with the onnion and tomatoe mixture. If that doesn't work try soaking the onions under water for a few minutes or add less of it

I make this at home all the time however I do chop the garlic up finely and about 2 garlic gloves will do, if the onion is strong, put less of it in. I like the taste of extra virgin olive oil as well. good luck
