It says, "You have three pies." This means that I have three pies all to myself at the beginning of the riddle. "You bake two more for yourself" indicates that I have the three pies and now I have two MORE pies. Simple math, 3 + 2 = 5.

And the other three pies can't be for someone else just yet, because at the beginning of the riddle I still have the pies, which implies that after the two pies are baked I am still in possession of the three pies.

I say you have two, because you said you bake two more for yourself, impllies the first three were not for yourself, but baked for someone else.
