Boston Baked Beans
* 2 cups (1 lb) dried navy beans
* 1 1/2 teaspons salt
* 3 tablespoons each molasses and brown sugar
* 1 tablespoons dry mustard
* 1/4 cup catsup (optional)
* 1 onion, peeled and left whole
* 1/4 salt pork
- Pick over beans to remove pebbles or bits of dirt, then rinse well in a colander. Place in a large pan, add 1 teaspoon salt and enough water to cover beans by about 3 inches. Bring to a rolling boil over high heat, and boil for 2 minutes. Remove the heat, cover pan, and let stand for 1 hour
- Uncover pan, bring back to boil, reduce heat, and simmer until beans are tender (1 to 1 1/2 hours). Add more water if necessary to keep beans well covered.
- Drain well, reserving liquid. In a bean pot or casserole of about 2 1/2-quart capacity, combine molasses, brown sugar, mustard, catsup (if desired), and 1/2 teaspon salt. Add drained beans, and stir in enough rserved cooking liquid to cover beans, mix well. Push while onion down one sde of beans. Cut several gashes in salt pork and bury it on the other side.
- Cover pot, place in ovem and turn heat to 350 F. Bake until the beans are bubbling (for an hour). Reduce heat to 250 F and bake for 6 to 8 hours more, stirring every hour or so. As beans cook, they will absorb liquid, continue adding reserved cooking liquid (or water), a little at a time, to keep them moist but not soupy.
- Baked beans are done when thick, fragrant, and a deep brownish red. They can remain in a 200 F oven for an hour or two hours longer if its needed, just remember to add liquid occasionally so they dont dry out. Beans are also reheat well the next day.

This restaurant recipe for these beans was originally developed by one of my long time food servers and I “tweaked” the recipe for use at my restaurant with her permission. I named the restaurant recipe “Dee Dee’s Beans” in her honor.
This restaurant recipe has been used many times by me because it “serves two masters:” delicious taste and time. It is unbelievably simple but produces such a fabulous result that my customers (guests) frequently ask me for my secret restaurant recipe.
ENJOY your baked beans and the company of those you share them with!
