Make sure you take the giblets and other stuff out of the cavity before you put it in the crock pot!! Then, put it in breast side up. I like to put some seasoning salt, pepper, italian seasoning, a little garlic powder and sometimes some lemon pepper seasoning just for good measure. You don't need any water because it creates it own juice. You can add veggies if you like. I like carrots, potatoes, onion and sometimes some squash. It depends on how long you want it to cook what setting you set it on, and what crock pot you have. Mine just has 1-5, so if I'm going to be gone for more then 8 hours, I set it on about 2, if I want it done in less then 3, I put it on 5. If you have low, medium and high, then low would be almost 8 hours, medium would be anywhere from 4-7 and high would be about 3 hours. I love chicken done in a crock pot!!

You can also add some either cream of mushroom, or cream of chicken with it, mixed with some milk to thin it out, and then just let it cook. It tasted really good too.

Roasted Butter Garlic Chicken

1 small chicken (4-5 lbs.)
salt
pepper
paprika
4 garlic cloves, minced
1 stick butter (4oz)
1/2 cup chicken broth

Sprinkle the chicken with inside and out with salt, pepper and paprika.
Spread 1/2 of the garlic inside the cavity and the other on the outside of chicken.
Place chicken in crock pot and place a few pats of butter on the breast.
Add remaining ingredients and cook on high for 1 hour, then turn to low and cook for about 5 to 7 hours or until juices run clear.
Reserve the butter sauce in crock pot to pour over chicken or use for gravy. Add your favorite side dishes. Potatoes, beans, salads etc.

Make sure it is defrosted. I usually defrost and partially cook the chicken in a pot of hot water as it helps it stay very moist.

I put about 2 cups of chicken stock in the bottom of the crock pot, then add carrots, red potatoes, green onions, garlic and celery. Then I cut the chicken up and put it on top - rubbed with poultry seasoning.

I cook it on low for 8 hours or high for 4.

I put lots of onion on the bottom of the pot and a few sprigs of rosemary. Then place the chicken on top of the onions and season with salt and pepper. You could also cut a lemon in half and stuff it inside the chicken first with some more rosemary and garlic.
