One Dish Chicken & Rice Bake

Serves: 4

Ingredients:
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1 cup water *
3/4 cup uncooked regular long-grain white rice
1/4 tsp. paprika
1/4 tsp. ground black pepper
4 skinless, boneless chicken breast halves

Directions:

MIX soup, water, rice, paprika and black pepper in 2-qt. shallow baking dish. Top with chicken. Season with additional paprika and pepper. Cover.

BAKE at 375°F. 45 min. or until done.

TIP: *For creamier rice, increase water to 1 1/3 cups.

Serve with your favorite steamed vegetable blend. For dessert serve pear wedges.

I make a really good, really easy casserole with it. Cook your chicken and rice first, separate of course. Then cut the chicken up, or shred it. Grate about a cup to cup and a half of cheese- cheddar works best, but any cheese is good. Mix rice, chicken, most of the cheese and a can of either cream of mushroom or cream of chicken soup, some pepper, a little salt and some garlic powder in a casserole dish. Put the rest of the cheese on the top, and bake it at 350 for 30 mins or until cheese is melted and starting to brown. You can also heat it up in the microwave, so it makes it really easy!!!

You can also make the casserole with whole chicken breasts, just lay them on top of the rice, then dump the soup over the top and put more cheese on it. It's pretty versitile. If you do it this way, thin the soup out with some milk, about a can full, so it will mix with the rice while it cooks.

Well, you could:
Long grain wild rice, cooked as directed. Pour into casserole pan. Place chicken breast (boneless skinless) on top. Mix cream of chicken or mushroom with a half of soup can of milk, pour over all. Cook 35 minutes at 350. I usually top with cheese the last five minutes of cooking to make it nice and gooey. My kids love this stuff. Even easier if you use like a minute rice.

I really like making this chicken and rice casserole during busy week nights. It only takes a few minutes to assemble and my family loves it.

INGREDIENTS:
2 cups uncooked Minute Rice
1 package Lipton's Onion Soup Mix, dry
1 cup water
Boneless, skinless chicken (About 12 small thighs or 6 large chicken breasts, cut in half.)
McCormick's Montreal Steak Seasoning (or any other seasoning you prefer.)
1 can cream of chicken soup, mixed with 1 1/2 cups chicken broth (or water)
1 cup shredded cheddar cheese (optional)

PREPARATION:
In 12 x 9 baking dish, pour the 2 cups of uncooked Minute Rice. Sprinkle the dry soup mix over this evenly. Pour the one cup water over rice and soup mix. Arrange the chicken pieces on top of the rice; sprinkle with the Montreal seasoning to taste.

Pour the cream of chicken soup/broth or water mixture over all. Sprinkle with cheese if desired. Bake uncovered at 350 degrees F for about 60-70 minutes.

Let it sit for about 5 minutes or so before serving. Makes about 6 servings.

You could substitute other cream-of soups, like cream of mushroom, if you want.

Well, since you have the meat and carbs part covered, just steam a vegetable and serve some rolls or bread and butter with it. I don't think you can get much easier, unless you nuke a can of veggies! Chicken and rice is fabulous, you don't have to continue going all-out with the rest of the meal, unless you want to be miserably stuffed at meal's end!

I like to make broccoli and cauliflower with my chicken and rice. Then put cheddar cheese sauce ( soup works well) over top of everything for a tasty treat.

my kids love some kind of mixed veggies or sweet peas with our chicken and rice. i sometimes put a pack of the mixed peas and carrots in our chicken and rice. it makes it alittle different for a change.

You can make a yummy side dish of Italian style green beans. My husband loves these. If you don't have shallots, you can use all garlic instead.

1 bunch of fresh green beans
1 bulb of shallots, sliced
1 garlic clove, diced
1 can diced tomatoes (Italian style)
Olive Oil
Salt & pepper


1) Sauté shallots and garlic in olive oil until tender.
2) Blanche green beans in boiling water until tender, drain water
3) Add green beans and tomatoes to pan w/shallots and garlic. Season with salt & pepper. Cook until mixed well.
