Just about any fruit. You can put blueberries IN pancakes - a lot of others are better as a topping. Strawberries cut up and mixed with powdered sugar are SUPER on top. You can also cut up the apples into thin slices, cook in butter and brown sugar and put that on top of the pancakes.
Coconut, chocolate chips and raisins could all go in the pancakes. You could also melt the chocolate and add the coconut and use it as a topping.
If you use the raisins, you may want to toss them with cinnamon sugar first. YUM!

This is the only way i eat my pancakes so listen (or i guess read) carefully
1. Mix up your batter and get the stove to the appropriate temp.
2. Add 5 dashes of cinnimon and a capful of vanilla flovoring
3. When pancake batter is on pan sprinkle as many blueberries and or strawberries as desired on the gooey end
4. Now follow the rest of ur normal procedures

I like mine with cranberries and walnuts. White chocolate chips are also good. You might also add cinnamon or nutmeg. Sage and potato makes a good savory pancake to serve with meat. And of course there's always blueberry pancakes. Or perhaps raspberry. Raspberries and white choc. chips would be a good combination. Pretty much any fruit will work, cut up.

You can add some mashed banana to the batter. Or slice some banana and place a slice on the frying pan before topping with pancake batter.
I once added some sliced almonds to pancake batter. They were very good.
Add some grated carrot, cinnamon and raisins.
Peel, core and slice an apple into rings. Dip into pancake batter and fry. Sprinkle with cinnamon sugar.

lmao... just got back to the computer after relaxing from dinner, and what we had -
basic bisquick recipe, added 1/3 - 1/2 c oatmeal, and some chopped pecans. I love the multi grain, so this was my own experiment.

Blueberries are my favorite. Almost any type of berry would be good, raspberry, strawberry, etc. Also, butterscotch and white chocolate chips.
