ST. PETER'S PUDDING

2 envelopes unflavored gelatin
2 Tbsp. sugar
6 oranges
orange juice
1/2 c. lemon juice
2 c. sugar
1 c. seedless green grapes
1/2 c. chopped walnuts
1/2 c. light raisins
12 pitted dates
12 maraschino cherries

In small saucepan, combine the gelatin and 2 tablespoons sugar. Add 1 cup
water and stir over low heat until gelatin is dissolved. Set aside.

Peel oranges and cut into sections holding over bowl to catch juice. Add
enough more juice to make 2 cups.
Pour into a large bowl. Add lemon juice, 2 cups of sugar and the gelatin
mixture. Stir until sugar is dissolved. Refrigerate, stirring occasionally
until it is the consistency of unbeaten egg whites. Fold in the orange
sections, grapes, walnuts, raisins, dates and cherries. Turn into a 12-cup
serving bowl. Refrigerate at least 12 hours before serving. Serve garnished
with whipped cream if desired.

Sweet Potato Bunns

2 cups pureed sweet potato
2 ½ cups sugar
1 3/4 cups sugar
skin of orange
1 1/3 cups dried Coconut (or 1.1 cups fresh coconut)
4 TBSP. bread crumbs
3 eggs
1 ½ cups minus 1 TBSP. Flour
1 ½ cups corn flour
1 1/3 cup chopped Almonds
salt
1 beaten egg yolk

Cook sweet potatoes, after peeling then and reduce to a puree. Add to 2 ½ cups of sugar, take to the stove stirring constantly until boiling. When cool add the remaining sugar and all the ingredients except the beaten egg yolk. Take to the stove again and mix well.
When cold, shape into little buns almond shape, with the beaten egg yolk spread over them and place into the oven until golden brown.

The Far Out Margarita Mocktail

* 3 oz. orange juice
* 3 oz. strawberry juice
* ice
* 1/8 fresh lime

In a cocktail shaker filled with ice, combine 3 oz. strawberry juice, 3 oz. orange juice, and the juice of 1/8 fresh lime. Shake and strain into a Margarita glass filled with crushed ice. Garnish with a strawberry or honeydew melon ball.
