...well... is it safe to eat a day after after the "Sell" by date?

Hamburger meat is the LAST meat you'd want to eat after it's sell-by date.
Lots of places take expired steaks and ground them up and sell it as burger meat.That's because older meat can be safe to eat if it's cooked thoroughly.Most people like a thick steak on the rare side,but if it's too old it's not safe to eat.But ground meat is almost always cooked until done because it's no longer a single thick piece of meat.

If refridgerated, I'd eat it up until 3 days after the expiration date

Depends,fresh or frozen/thawed? A day beyond xp is not a problem as stores per FDA regs have certain guidelines to follow and that includes a 1 or 2 day "window for xp dates."

To be honest, I never eat pre-prepared food anyway and especially not burgers.
Anyway, they're so simple, quick and easy , you'd be safer to make your own!

one day is fine, but any more than 2 days then throw it, but if it tastes funny then trash it.
