yes you can substitute all purpose flour for bread flour. If you happen to have some wheat gluten in your pantry add 1 table spoon of it for each loaf of bread you plan to make if not go with straight all purpose flour and you need not change any thing else.on the first rise let the dough double in volum . I use all purpose flour because you
are able to find it on sale quite often.
and it is much cheaper than bread flour.
Just buy you a 6 1/2 oz. box of Hodgson Mill Vital Wheat Gluten at Wall-mark in the flour section . add it to your flour as directed
I realy don't think you will be able to tell the differance. I hope this has helped you

You sure can. All-purpose is just that, you can do almost anything with it. Of course specialty bread flour will give you better results, but it doesn't really matter.

it will work, but it has a lot less gluten in it, which helps it rise. it wont be as fluffy or as large a loaf, but it will work. double the yeast, and add a tablespoon of oil to make it more stretchy. maybe a skosh more sugar, too. the yeast eats the sugar to make co2, which raises it. the extra yeast wont matter as long as it gets to eat the sugar, and uses itself up.
