Swiss Steak
Tenderize meat by pounding with a meat tenderizing mallet or the edge of a plate until it's thin. Cut into small (approx. 3x4-in) pieces.
Dredge in seasoned flour and brown in olive oil.
Layer in a baking dish with canned stewed tomatoes and sliced onions. Pour in all of the tomato juice too.
Bake @ 350 or so for at least 30 minutes (depends on how much is in your dish and how deep it is), until the onions are very soft and the liquid has diminished somewhat.
Serve with brown or white rice or mashed potatoes and veggie of your choice. Spoon liquid over rice or potatoes.
You really can't over bake this, unless it cooks dry. It just gets more tender. Leftovers are awesome. Any kind of canned tomatoes will do. We buy meat when it's on sale and marked down (aged). Look for already tenderized round steak, sometimes labeled simmering steak or breakfast steak. We store it in the freezer until we have several packages and make up a big batch. This is one of the requested dinners when the kids come home for visits.

Pound your steak until its about 1/4 inch thick. Season with salt and pepper. Take 4 ozs of gorgonzola cheese, 1 T fresh parsley, and 1/2 cup soft bread crumbs. Mix together and spread on the steak. Roll the steak around the filling and tie with butchers twine if you have it. If you don't, you can make do with some embroidery thread, 4 thicknesses. Place in 400 degree oven for 5 minutes. Reduce heat to 350 and bake for approximately 25 minutes. Let rest on cutting board after you pull it out. In a sauce pan, combine 1/2 cup good red wine with 1/2 cup chicken broth, 1/2 tsp dijon mustard, 1/2 tsp fresh thyme and blend until smooth. Add salt and pepper to taste. Pour on slices of steak and serve.

INGREDIENTS
1/2 pound eye of round, thinly sliced
1/4 cup lime juice
1/4 cup honey
1 tablespoon vegetable oil
2 teaspoons toasted sesame seeds
2 teaspoons reduced-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon finely chopped fresh ginger root
4 leaves red leaf lettuce - rinsed, dried and torn
4 (8 inch) flour tortillas
DIRECTIONS
Place sliced beef in a shallow bowl. In a jar, combine lime juice, honey, oil, sesame seeds, soy sauce, sesame oil and grated ginger. Seal lid tightly, and shake until well combined. Pour over beef, and marinate 30 minutes.
Heat a nonstick skillet until very hot. Pour beef and marinade into pan, and saute on high heat until steak is evenly brown. Remove beef with a slotted spoon. Continue boiling marinade until reduced by half, stirring frequently to prevent burning, about 5 minutes. Put steak slices back into marinade, mix well, and set aside to cool slightly.
Place lettuce leaves on tortillas, and evenly distribute steak slices between all tortillas. Fold bottom of tortilla up by 1/3, then tightly roll from the side until wrapped.

How about italian style? Make a tomato marinara sauce (or use your favorite bottled sauce). Quickly pan-sear the meat then add to the sauce to warm through. Serve with mashed potatoes and green vegetables. Yummo!

2 lg. cloves garlic, crushed
1 tsp. chili powder
1 lb. boneless top round steak, trimmed of fat
1 (16 oz.) pkg. frozen broccoli, carrots, and pearl onions
1 (16 oz.) can black eyed peas, drained and rinsed
2 tbsp. fresh lime juice
1 tsp. grated lime peel
1 tsp. salt
1/4 tsp. freshly ground black pepper
Lettuce leaves (optional)
Heat broiler. Rub garlic and chili powder over both sides of steak; place steak on rack in broiler pan. Broil, about 4 inches from heat source, 3 to 4 minutes on each side until medium rare, or to desired doneness. Meanwhile, cook vegetables according to package directions. Cut steak into thin slices; drain vegetables. Combine steak, vegetables, black eyed peas, lime juice, grated lime peel, salt, and pepper in large bowl; toss well to mix. Serve beef mixture on lettuce lined platter, if desired.

try to marinate the steak with about 4 tablespoons of soy sauce and 1 tablespoon of BBQ sauce and 2 teaspoons of minced garlic leave them to marinate for 6 hours and maybe do it with roast potatoes and pumpkin and mixed veggies maybe.

I would simmer it a bit in olive oil,a bit of shaved onion,sprinkle with grated cheese ,serve on warm toast,a can of backed beans if you have it!!
