2 (10 oz.) pkgs. frozen chopped
broccoli
2 c. herb stuffing mix
1 c. grated Parmesan cheese
6 eggs, beaten
1 1/2 sticks margarine, softened
1/2 tsp. salt
1/4 tsp. pepper
Cook brococli according to package directions; drain well. In a medium bowl, combine cooked broccoli, stuffing mix, cheese, eggs, margarine, salt and pepper. Roll mixture into small balls, about 1 inch. Freeze, well covered, for at least 3 hours. Preheat oven to 350 degrees. Place frozen balls on lightly greased cookie sheet. Bake until brown, about 15 minutes.

Black-Eyed Peas Cornbread
1 pound of ground beef
1 (15-ounce) can black-eyed peas, drained
1 cup chopped yellow onions
3/4 cup or cream-style corn
1/2 cup all-purpose flour
1 cup white cornmeal
1 cup buttermilk
1/4 cup cooking oil
2 eggs, slightly beaten
1 teaspoon salt
1/2 teaspoon baking soda
2 jalapeño peppers (bottled or fresh), chopped
1 cup grated Cheddar cheese
Preheat oven to 350 degrees. Grease a 13-by-9-by-2-inch baking dish.
Place beef in large skillet over medium heat; cook until just beginning to brown. Drain and crumble; set aside
Add peas, onion, corn, cornmeal, flour, buttermilk, oil, eggs, salt, baking soda, peppers, and cheese to a large bowl in the order given. Mix well - Add beef and then pour into baking dish
Bake for 40 - 50 minutes or until firm and slightly browned.
I like to eat mine with collard greens, pickled okra, and sliced home grown tomatoes. But you would not need that for a potluck.
It is very good! I got that from my grandmother - a "dirty south" favorite!

This Farmer's Strata is delicious, inexpensive, and fills a large crowd. Pre-cooked ham can be found at your grocery store.
INGREDIENTS
1 pound sliced bacon, cut into 1/2 inch pieces
2 cups chopped fully cooked ham
1 small onion, chopped
10 slices white bread, cubed
1 cup cubed cooked potatoes
3 cups shredded Cheddar cheese
8 eggs
3 cups milk
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
1 dash salt and pepper
DIRECTIONS
In a large skillet, cook bacon over medium heat until crisp; add ham and onion. Cook and stir until onion is tender; drain.
In a greased 13-in. x 9-in. x 2-in. baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese.
In a bowl, beat the eggs; add milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. Cover and chill overnight.
Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 65-70 minutes or until a knife inserted near the center comes out clean.

Beef Taco Bake
Serves: 4
Ingredients:
1 lb. ground beef
1 can (10 3/4 oz.) Tomato Soup
1 cup (small jar) Chunky Salsa OR Picante Sauce
1/2 cup milk
6 (8") flour tortillas, cut into 1" pieces OR 8 (6") corn tortillas, cut into 1" pieces
1 cup shredded Cheddar cheese (4 oz.)
Directions:
COOK beef in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat.
ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.
BAKE at 400°F. for 30 min. or until hot. Sprinkle with remaining cheese.

Nachos are simple and a BIG hit. I don't know what ingredients you have to work with, but here is a simple one that I use for surprise visitors:
8 corn tortillas cut into 8 pieces each (fry them in oil or bake them until crisp)
Layer the tortillas with black beans, diced tomatoes, sour cream, shredded lettuce, black olives, and shredded cheddar cheese.
Add a layer of ground pork, browned, for a non-vegetarian option.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

CHEESY POTLUCK POTATOES
2 lb. pkg. frozen hash browns
1 c. diced onion
1 c. cream of chicken soup
1 lb. sour cream
1/4 lb. melted butter
8 oz. shredded cheddar cheese
Combine all ingredients. Bake at 375 degrees for 1 hour.

Pasta salad
any type of paste cooked and add mushrooms, tomatoes and onions and any thing else you like like cucumbers or black olives add some Italian Dressing and top with cheese try to chill a little it will be great.
