The tuna salad you find at sandwich and subway shops is basically pulverized into almost a paste. The primary ingredients are tuna packed in oil, finely diced sweet onion or scallion, finely diced celery and a bunch of mayonnaise.
Drain the tuna and put it into a bowl. Break it up really well with a fork. Then break it up some more. Add some of the diced celery and scallion and more mayonnaise than you think you'll need and combine everything really really well.
Now for the secret: Cover the bowl with plastic wrap and refrigerate the tuna salad overnight. Overnight refrigeration is key as it allows the flavors to marry. You'll be rewarded at lunch the next day with some great tuna. For authenticity, put it on Pepperidge Farm white bread with a lettuce leaf.

It is pressure canned. Raw tuna is packed in cans (unsealed), liquid such as oil or water is added, and it is put in a pressure cooker. The pot is brought to a boil at pressure (at this point, the pressure makes the temp around 250F), and it is cooked. They allow the pressure to decrease to ambient, and the cans are sealed and cooled.
Tuna used to be a "junk fish". Nobody liked it because the usual method of cooking fish is to fry it. Fried tuna is worse than bologna, peanut butter, ketchup, and cottage cheese sandwiches. Somewhere around 1920, somebody discovered that tuna is actually very good if it is pressure canned. The rest is history.

Your best bet is to ask someone in the Deli at the store what type of tuna they use. It is probably the white albacore. The type of mayonnaise might also make a difference. They probably won't mind telling you and if they won't tell you you haven't lost anything.

The reason why it doesn,t taste the same is because the tuna is boiled then canned during the aging process in the can it gets its flavor from its own oils and juices in the can
